Öğe Yemek kültürünün nesilden nesile aktarılması: Bir uygulama(Motif Halk Oyunları Eğitim ve Öğretim Vakfı, 2025) Koç, Fatma; Karaman Taşkesenligil, Elif EsmaBu çalışma, yemek kültürünün nesilden nesile aktarılma sürecini incelemeyi amaçlamaktadır. Yemek kültürü, bir toplumun tarihini, coğrafyasını, değerlerini ve yaşam tarzını yansıtan önemli bir kavramdır. Genellikle aile içinde, anneanneler, babaanneler ve diğer aile büyükleri tarafından genç nesillere tarifler, pişirme teknikleri ve yemekle ilgili gelenekler aktarılmaktadır. Araştırmanın amacı, yemek kültürünün toplumların kimlik ve değerlerini yansıtan temel bir unsur olduğunu göz önünde bulundurarak, bu kültürün nesiller arası aktarımını etkileyen faktörleri ortaya koymaktır. Bir diğer alt amaç ise, bu aktarım sürecinin çeşitli sosyo-demografik değişkenlere göre nasıl farklılaştığını saptamaktır. Çalışma Siirt’te ikamet eden 18 yaş ve üzeri gönüllü katılımcılardan oluşan 404 kişi ile tamamlamıştır. Örneklem seçimi, tesadüfi olmayan kolayda örnekleme yöntemi ile gerçekleştirilmiştir. Örneklemi oluşturan katılımcılara göre yemek yapım aşamalarının karmaşıklığından ve fazla zaman almasından kaynaklanan zorlukları yemek kültürünün aktarılmasında yaşanılan temel problemdir. Bu durum, özellikle modern yaşamın getirdiği zaman kısıtlamaları ve hızlı tüketim alışkanlıklarıyla birleştiğinde, geleneksel yemek tariflerinin yeni nesillere aktarılmasını daha da zorlaştırmaktadır. Katılımcıların yemek kültürünü öğrenmede en çok başvurdukları kaynakların başında (n=189) aile üyeleri gelmektedir, bu da yemek kültürünün nesiller arası aktarımında ailenin önemli bir rol oynadığını göstermektedir. Çalışmanın diğer sonuçlarına göre katılımcıların cinsiyeti, kuşakları, göçmenlik durumu, yemek yapma beceri seviyeleri, memleketleri, meslek grupları, eğitim seviyeleri ve hanede yaşayan kişi sayısı ile anket alt boyutları arasında anlamlılık vardır (p<0,05). Bu sonuçlara dayanarak, yemek kültürünün geleceğe taşınabilmesi için farklı sosyo-demografik gruplara hitap eden destekleyici politikaların oluşturulması önemlidir.Öğe Multivariate evaluation of vitamin and mineral retention across diverse foods and processing methods(Gültekin Özdemir, 2025) Durmuş, YusufThis study aimed to elucidate the effects of food matrix and processing methods on nutrient retention by applying multivariate and dimensionality reduction analyses to retention factor data. The nutrient retention factor (RF) data for different foods and processing methods were obtained from the Australian Food Composition Database. A total of 261 RF values were analyzed for 16 nutrients, 30 food categories, and 57 processing types. Dimensionality reduction and clustering techniques, including principal component analysis (PCA), isometric mapping (ISOMAP), uniform manifold approximation and projection (UMAP), and hierarchical cluster analysis (HCA), were employed to explore relationships among nutrients, foods, and processing conditions. The results showed that nutrient stability varies substantially depending on the nutrient class, food matrix, and processing intensity. Minerals such as Zn, Fe, Ca, P, and Mg showed the highest mean RFs (>0.90), indicating strong thermal and oxidative stability, whereas water-soluble vitamins, including folic acid, vitamin B1, vitamin B6, and vitamin C, showed the lowest retention (<0.80). The highest nutritional losses occurred by moist-heat treatments, especially extended boiling while the most effective nutrient preservation was achieved by reheating and rapid preparation. Correlation and clustering analyses demonstrated that the nutrient retention patterns are significantly impacted by dietary matrix composition and processing intensity. Dimensionality reduction techniques revealed distinct grouping patterns among food categories, emphasizing the effects of the food matrix on nutrient retention. Legumes and pasta experienced extensive water-soluble vitamin loss due to leaching, while meats and dairy products exhibited moderate vitamin loss and stable mineral retention. Overall, this study offers a thorough multivariate evaluation of nutrient retention behavior, providing insightful information for improving processing and cooking techniques to raise food quality while minimizing micronutrient losses.Öğe Reflections of Turkey-Greece population exchange on Manisa Alaşehir culinary culture(ELSEVIER, 2025) Oğan, Yener; Uzman, MelihAnatolia, with its geopolitical position, climatic characteristics, and fertile lands, is an ancient region that has hosted numerous civilizations and experienced significant migration phenomena. One of the notable migrations in this region in recent centuries is the population exchange. The population exchange occurred between Turkey and Greece under an agreement supplementary to the Lausanne Peace Treaty. As a result of this agreement, citizens of both countries were subjected to compulsory migration based on their religious beliefs and are referred to as exchangees. Among the settlements in Turkey where exchangees are densely populated is the Alas, ehir district of Manisa province. Within this context, the purpose of this study is to examine the elements of exchangee culinary culture within the Alas, ehir cuisine. The research adopts a qualitative approach, with data collected through semi-structured interview forms. Employing purposive sampling, the study includes 13 participants who were forcibly migrated to the district as a result of the population exchange. Content analysis of the data obtained from participants was conducted under five main themes: "Population Exchange, Food and Beverage, Culinary Practices, Events, and Traditionality." Beyond the deep historical roots of exchangee cuisine, significant findings were obtained regarding dishes, cooking techniques, preservation methods, tools and equipment, gastronomic products, meals, and ceremonies associated with the exchangee culinary culture. In this regard, the study is expected to contribute to the preservation of the traditional structure of Alas,ehir's exchangee culinary culture while fostering the development of a sustainability perspective.Öğe A study on identifying leadership behaviors and styles of prospective kitchen chefs(ALEXANDRU IOAN CUZA UNIV, 2025) Çakıroğlu, Nadide; Oğan, Yener; Taşdemir, TanerLeadership involves setting common goals within a group, influencing others' behaviors, and directing them toward a target. Leadership behaviors and styles can vary depending on the individual and professional characteristics of the leaders. Kitchen organizations are structured in a way that requires division of labor due to their inherent nature, with sections such as cold, hot, pastry, bakery, soup, breakfast, and butchery. Therefore, individuals working in various positions within the kitchen, such as head chefs, sous-chefs, section chefs, and line cooks, must possess leadership qualities. This study aimed to determine the leadership behavior tendencies and leadership styles of students studying gastronomy and culinary arts at Artvin & Ccedil;oruh University. Consequently, the study group comprised students in gastronomy and culinary arts programs at Artvin & Ccedil;oruh University. The saturation (complete enumeration) technique was applied during sampling, and 128 candidate students were included in the study. It was found that participants demonstrated higher participation in "people-oriented leadership" behaviors. Significant differences in leadership behavior tendencies and leadership styles were observed only between genders. Male participants indicated higher adherence to structural and political leadership styles than did female participants. In conclusion, adopting a people-oriented leadership style by students of gastronomy and culinary programs could be an advantage in their careers, as they are likely to lead many people their lives.Öğe Tat ve tutarlılık: Türk mutfağındaki lezzet uyumları(İrfan Yazıcıoğlu, 2025) Karaman Taşkesenligil, Elif Esma; Koç, FatmaBu çalışma, Türk mutfağındaki lezzet uyumlarını incelemek ve bu uyumları etkileyen faktörleri belirlemek amacıyla gerçekleştirilmiştir. Katılımcıların en çok tercih ettiği tatlı-tuzlu kombinasyonu %24,4 (n=97) ile karpuz/kavun ve beyaz peynir olurken, ara öğünlerde en çok tercih edilen kombinasyon %21,9 (n=87) ile meyve ve yoğurt, ana öğünlerde ise en çok tercih edilen kombinasyon %28,4 (n=113) ile çorba, kırmızı etli ana yemek, salata ve cacık olarak belirlenmiştir. Türk mutfağında sos uyumlarına bakıldığında, katılımcılar mantı ve börek ile servis edilen sarımsaklı yoğurt ve tereyağlı sosu %29,4 (n=117) ile en uyumlu sos olarak belirtirken, tavuk şiş için hazırlanan yoğurtlu ve sarımsaklı sos %11,8 (n=47) ile en az uyumlu sos olarak ifade edilmiştir. Bu çalışma, Türk mutfağındaki lezzet uyumlarını ve bu uyumu etkileyen faktörleri ortaya koyarak, yerel tatların korunması ve geliştirilmesi konusunda önemli bir rehber oluşturmaktadır.
